Ingredients:

  • 4 chorizos

  • 1 large onion

  • 2 red bell peppers

  • 2 green bell peppers

  • 2 ripe tomatoes

  • 2 garlic cloves

  • Olive oil

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions:
  1. Slice the chorizos into rounds and set aside.

  2. Finely chop the onion, bell peppers, tomatoes, and garlic.

  3. Heat a drizzle of olive oil in a large skillet over medium heat.

  4. Add the chopped garlic and sauté until fragrant, then stir in the onion and cook until it becomes translucent.

  5. Add the bell peppers and cook until tender.

  6. Stir in the chopped tomatoes and let them cook down into a sauce.

  7. Add the chorizo slices to the skillet and cook for a few more minutes, allowing the chorizo to heat through and absorb the sauce’s flavors.

  8. Adjust the seasoning with salt and pepper to taste.

  9. Serve warm, garnished with fresh parsley if desired.
