Ingredients: 200 g of chopped Mexican Toluca chorizo
12 corn tortillas
1 cup of cooked beans
2 tomatoes, chopped ¼ onion chopped
1 serrano pepper
½ cup cream
8 eggs
1 cup coriander leaves
Enough oil for frying
How to make it:
1. Form a casserole with the tortillas holding with the help of a toothpick or between two ladles. Fry in hot oil until golden brown
2. Brown the chorizo in a skillet over medium heat, when it starts to brown add the beaten eggs, cook without stopping moving.
