LA DEL BARRIO
A classic recipe, made easy. That moment when you take a bite and juicy chorizo comes out — that’s the moment you’ve been waiting for...

Ingredients:
Empanada dough (store-bought or homemade)
Toluca Colombian Chorizo (½ lb)
Shredded cheese (¼ cup, optional)
Fresh chimichurri (for serving)
Oil for frying (or lard if you prefer to bake)
Instructions:
Crumble the Toluca Chorizo into a skillet. Cook over medium heat for 3–4 minutes, until browned. Let cool.
Place a spoonful of chorizo in the center of each dough circle.
Add a pinch of cheese, if desired.
Fold the dough in half and seal the edges firmly with a fork.
Fry in hot oil until golden brown, about 2–3 minutes per side. OR place on a baking sheet and bake at 400°F for 12–15 minutes.
Serve with fresh chimichurri.
