CHENGA TOLUCA

A traditional, hearty dish full of Central American history.



Ingredients:

  • Toluca Chorizo

  • Beef chunks

  • Yuca

  • Green plantain

  • Garlic

  • Onion

  • Cumin

  • Cilantro

  • Salt to taste


Instructions:

  • In a large pot, sauté the Toluca chorizo ​​until it releases its flavor.

  • Add the beef and cook until browned. Stir in the garlic, onion, and cumin. Add water and cook over medium heat.

  • When the beef is tender, add the yucca and green plantain. Cook until everything is well combined and the sauce has thickened. Finish with fresh cilantro.
